Flodeboller, mallow fluff cakes: the original danish dessert

Ingredients:
120 ml of water
300 grams of sugar
160 grams of glucose sirup
6 egg whites
4 tbsp of raspberry powder
7 tbsp of cocoa powder
500 grams of white chocolate
15 grams of cocoa butter
30 round wafers
Directions:
In a mixer, blend egg white until you have a smooth mass. In a saucepan, bring sugar, glucose and water to the boil. Add the mix to the eggs. Divide into two portions. Add in one of these raspberry powder and mix well. Add in the other add cocoa powder. Spread on wafers. Cover them with melted white chocolate.
