Almond roll cake: sweet, original and tasty!

A unique dessert that everyone will love!
INGREDIENTS
INGREDIENTS
4 egg whites;
a pinch of salt;
135 g (⅔ cup) sugar;
15 ml (1 tbsp) vinegar;
15 g (1 tbsp) cornstarch;
80 g (⅔ cup) almond flakes;
250 g (1 cup) mascarpone;
15 g (2 tbsp) powdered sugar;
1 tsp vanilla extract;
100 ml (⅓ cup+1 tbsp) whipping cream;
300 g (2 cups) chopped strawberries.

METHOD
- Beat egg whites with salt and vinegar until stiff, then start adding sugar in portions.
- When all of the sugar has been incorporated and stiff peaks form, whisk in cornstarch and spread on the cake pan.
- Sprinkle almonds on top and bake at 160°C/320°F for 25-30 minutes.
- When out of the oven, roll carefully and leave to cool down completely.
- Beat mascarpone with vanilla, powdered sugar and whipping cream. Spread on top of the cake layer, then top with strawberries and roll back up.
