Italian Donuts with Vanilla Pastry Cream: very easy to prepare at home

BOMBOLINI DOUGH
1/2 Cup Milk
4g Dry Yeast
Eggs - 1 each + 1 yolk
Lemon Zest
20g Granulated Sugar
1/2 tsp Kosher Salt
2 Cups Flour
14g Butter
Frying Oil
Mix all ingredients, and knead for 10 minutes. Use both hands to work it into a nice compact ball. Cover with plastic film for an hour. Fry the bombolini.
CINNAMON & SUGAR MIX
1 tsp Ground Cinnamon
2 Cups Granulated Sugar
The next step is to dust the bombolini with some cinnamon and sugar.

VANILLA PASTRY CREAM
33 grams Cornstarch
3 each Egg Yolks
1/2 Cup Milk
1/2 cup Sugar
Vanilla Bean
1 1/2 Cup Milk
1 tbsp Butter
Bring the mixture to just below a simmer over medium-high heat. Bring it to the proper consistency. Place it in the refrigerator. Fill each bombolino with the chilled vanilla pastry cream.
