Kranz, the Austrian dessert that everyone will love

Ingredients:
for the brioche dough:
250 gr of "00" flour
35 gr sugar
7 gr fresh brewer's yeast
90 gr eggs
40 ml milk
7 gr honey
7 gr rum
1/2 lemon or orange zest
90 gr soft butter
4 gr salt
a rectangular sheet of puff pastry
to fill:
q.b. apricot jam
candied cubes of orange
q.b. sultana raisins
to brush:
1 yolk
a few drops of milk
q.b. granulated sugar
 

Directions:
In a glass, mix honey, rum and lemon zest.
Mix flour, sugar, yeast and milk. Then add the eggs, herbs, butter and salt. Let the dough rise until doubled in volume. Then roll it out and stuff it.
Form the kranz and arrange them on a baking sheet, let them rise for a couple of hours. Then brush with egg yolk and milk. Bake at 356°F (180°) for 20/25 minutes.
