Fig biscuits: the recipe to make them so delicious

Ingredients:
Dough:
200 gr of "00" flour
50 gr of potato starch
20 gr of almond flour
50 grams of sugar
50 gr of cold butter
1 large egg + 1 pinch of salt
3 tablespoons of milk
1 teaspoon of baking powder
the zest of half a lemon
 

Ingredients for the fig filling:
330 gr of figs weighed without peel
50 grams of sugar
the zest of half a lemon
20 gr of almond flour
 

Directions:
Dough: in a bowl mix egg, salt, sugar and lemon peel. Add the sifted flours and then add the milk. At this point add the almond flour and knead. Add the butter and knead everything until you have a uniform dough. Leave in the fridge for an hour.
Filling: cut the figs into very small pieces and mix them with sugar and lemon peel. Cook for 15 minutes in a pan and then add the almond flour.
Roll out the pastry, form the biscuits and bake at 356°F (180°) for 20 minutes.
