FIG CHEESECAKE RECIPE: a delicious no-bake recipe, QUICK AND SUPER EASY π

INGREDIENTS
200g dry biscuits
100g (2/5 cup) butter

400g (1 ΒΎ cups) fresh spreadable cheese
230ml fresh liquid cream (200+30)
100g (4/5 cup) powdered sugar
4 sheets gelatine (8g)
100g fresh figs, chopped

250g fresh figs, chopped
100g (Β½ cup) sugar
Β
Fresh figs to decorate to taste

METHOD
1.Β Blend the cookies until you get almost a flour-like consistency. Add the melted butter and mix until you get a workable and compact consistency.
2. With a spoon, spread the cookies well on the base of the cake pan; we're using a 22cm one.
3. Set aside and let it rest in the fridge.
4. Soak the gelatin sheets in plenty of cold water and let them soak for 5-10 minutes.
5. In a bowl, beat the cream cheese and powdered sugar until smooth. Now you can add the peeled and chopped figs. Mix well to distribute them evenly.
6. In a separate bowl, whip the cream until it becomes fluffy. Gradually incorporate it into the cheese and fig mixture, gently mixing from bottom to top.
7. The gelatin sheets are ready. Squeeze them and melt them in a saucepan with the fresh cream. Stir continuously until completely dissolved.
8. Add the gelatin to the cream mixture and stir to absorb it.
9. Take the cookie base and spread the cream evenly. Let it rest in the fridge for at least 3 hours to firm up well.
10. Meanwhile, cook the chopped figs with the sugar in a saucepan for at least 5 minutes until you get a kind of jam.
11. Spread it over the surface of the cheesecake and decorate it with more figs, which go perfectly.
