Knafeh recipe: how to make one of the most popular desserts in the Middle East

340g (12 oz) Shredded phyllo dough
190g (3/4 cup) Butter
285g (1.1 cup) Ricotta cheese
240ml (1 cup) Water
100g (1/2 cup) Sugar
5ml (1 tsp) Rose water
15g (3 tsp) Lemon juice
30g (1/4 cup) Roasted pistachios
METHOD
- For the syrup: In a pot pour the water, add rose water, sugar and lemon juice. Mix and boil until sugar is melted.
- In a bowl with phyllo dough pour the melted butter. Mix it and add half of it to a pan. Make a circle and add ricotta cheese. Cover with the other half of the dough. Fry for about 5 minutes. Flip it and fry the other side. Turn the heat off and pour the syrup.
- Decorate with chopped roasted pistachios. Serve.
