Zucchini and potato frittata: a very tasty and easy meal

Ingredients:
4 eggs
2 medium potatoes
1 onion
2 spring onions
6 zucchini
Grated cheese
Parsley
Thyme (or marjoram)
Black pepper
Extra virgin olive oil
Salt
Preparation:
Cut the zucchini, potatoes, onion and spring onions. Cook separately but in the same pan. Once you have cooked all the ingredients you can prepare the omelette. In a bowl break the eggs and add all the other ingredients, including salt and pepper. Put a little oil in a non-stick pan and cook the omelette.
