Baked panzerotti: a simple recipe you have to try

Ingredients:
500g all-purpose flour
150g mother yeast, freshened and doubled
1 teaspoon sugar
20g butter, softened
20ml milk
2 teaspoons salt
Cooked tomato sauce
Scamorza
Ham

Directions:
Put the flour and mother yeast in a bowl. Start kneading the two mixtures by adding a teaspoon of sugar and 20ml of milk. During processing, add the softened butter and two teaspoons of salt until you have obtained a smooth dough. Let it rise until doubled. Then form the balls, more or less 100g each and let rise for an hour. Then roll out each portion and stuff. Close to form some half moons and brush the tomato. Bake at 200°C (400°F) for 15 minutes in a convection oven.
