Sausages and aubergines penne: a delicious main dish

Ingredients:

400 gr. Striped penne
1 tomato sauce
2 sausages
1 aubergine
5 red spring onions
Basil
Fresh chili
Plain olive oil flavored with garlic (optional)
Plain olive oil
Provolone

Cut the aubergines, spring onions and crumble the sausages. Fry the aubergines and place them on a plate. In another pan pour some flavored olive oil (or plain olive oil) and as soon as it is hot add the sausages, blend with some white wine. Then add spring onions and tomato sauce and cook. Add the basil and stir, cover and cook for an hour. Cook the pasta and then pour into the saucepan with the sauce, add the aubergines and mix everything. Season with grated Provolone cheese and if you want, add the chilli pepper.
