BANANA CREAM: quick and easy to make, perfect for adding a touch of class to your desserts!

INGREDIENTS
4 bananas
15g of butter
1/2 lime (juice)
310ml (1 1/4 cups) of milk
30g (1/4 cup) of cornstarch
3 egg yolks
Vanilla essence
400ml (1 3/4 cups) of fresh cream
For decoration:
Biscuits
Whipped cream
Banana slices
Mint
METHOD
1. Peel and cut the bananas into pieces.
2. In a pot, add the butter and let it melt. Add the banana pieces and lime juice, and cook for a few minutes on low heat.
3. Turn off the heat and blend with the immersion blender until smooth. Add the milk, cornstarch, egg yolks, and vanilla essence, and cook on low heat.
4. Blend the mixture again and cook until you obtain a creamy consistency. Remove from the heat and transfer to a bowl.
5. Cover the bowl with cling film and refrigerate for 2 hours.
6. Add the fresh cream to a separate bowl and mix with an electric mixer to obtain whipped cream.
7. After the chilling time is up, remove the banana cream from the fridge and mix it again with the mixer.
8. Add the banana cream to the whipped cream and combine them together.
9. To prepare the glasses, layer the biscuits, banana cream, whipped cream, and banana slices. Decorate with mint and serve.
