Eggplant "pockets": how to make a tasty and original dish

Ingredients:
2 eggplants
Olive oil
Salt and pepper
Half an onion
1 red bell pepper
1 garlic clove
200 g of tomato sauce
Salt and pepper
Fresh parsley
50 ml of water
70 g of breadcrumbs
100 g of mozzarella cheese
30 g of grated cheese
Directions:
1. Slice the eggplants, season with salt and let sit for 15 minutes.
2. Sautee the onion and add diced bell pepper.
3. Now add garlic, tomato sauce, parsley, salt and pepper.
4. Pour in water and let simmer for 10 minutes.
5. Bake eggplants at 180° for 20 minutes.
6. Assemble in a baking tray and continue cooking for 20 minutes.
