Potato rolls: the recipe for a tasty and original meal

Ingredients:
- For the rolls:
700 g of potatoes
3 eggs
Parsley
Salt, pepper, paprika
80 g of grated cheese
Olive oil
For the stuffing:
1 large eggplant
400 g of turkey
100 ml of tomato sauce
Salt, pepper, paprika
Cheese
Oil
Directions:
1. Grate potatoes, soak them in water and squeeze them.
2. Add eggs, paprika, grated cheese, olive oil, salt and pepper.
3. Place the mixture on a baking sheet and flatten.
5. Bake at 180° for 15 minutes.
6. Cut onions, eggplants and meat in small pieces. Then cook in a pan with some olive oil.
7. Add tomato. sauce and let simmer for a few minutes with a lid on.
8. Make some baked potato squares and fill with the eggplant and meat mixture.
9. Shape the rolls, drizzle with olive oil and place some mozzarella cheese on top.
10. Bake for another 5 minutes.
