Danish swivels: the recipe to make them creamy, fluffy and delicious

Ingredients:
- For the pre-dough:
50 g of Manitoba flour
30 g of water
2 g of fresh brewer's yeast
1 pinch of sugar
- For the second phase:
50 g of manitoba flour
30 g of water
1 pinch of water
- For the custard:
1 egg
200 g of milk
4 tbsp of sugar
2 tbsp of flour
Lemon zest
- For the dough:
1 egg
120 g of sugar
Grated orange zest
140 g of milk
50 g of sunflower seeds oil
Vanillin
1 pinch of salt
300 g of Manitoba flour
Cinnamon
50 g of raisins
10 halzenuts
Directions:
1. Pre-dough: mix flour, water, yeast and sugar. Knead and let rise overnight.
2. Then mix it with milk, add pinch of sugar and flour.
3. Knead until smooth and let rise until it it doubles its size.
4. Now mix it with milk, egg, orange zest, vanillin and cinnamon.
5. Whisk and gradually add flour now.
6. Lastly add salt and oil, then knead. Let rest for 30 minutes.
7. Custard: mix sugar, flour and egg. Then pour in warm milk.
8. Bring back on the stove and stir until it thickens. Then let cool.
9. Now cut the dough and shape the swivels.
10. Stuff with custard and soaked raisins.
11. Sprinkle with chopped hazelnuts and cinnamon.
12. Bake at 170° for about 20-25 minutes.
