Peanut layered cake: the recipe for an irresistible dessert

Ingredients:
- For the batter:
3 eggs
1 pinch of salt
90 g of sugar
20 g of vegetable oil
90 g of flour
1 tsp of baking powder
60 g of roasted peanuts
- For the croquant:
80 g of peanuts
5 g of butter
40 g of sugar
- For the filling:
200 g of unsalted butter (room temperature)
180 g of condensed milk
80 ml of milk for brushing
Directions:
1. Whisk egg whites with salt and sugar a little bit at a time.
2. Stir in egg yolks and oil.
3. Now sift and add flour and baking powder, mixing gently.
4. Lastly add coarsely chopped peanuts.
5. Pour the batter in a cake pan and bake at 180° for 30 minutes.
6. Cut the cake into two equal layers.
7. For the croquant: pour sugar, butter and chopped peanuts in a pan. Cook until they're caramelized.
8. Flatten the mixure in a tray and let cool.
9. Whip butter for 5 minutes, then gradually add condensed milk.
10. Assemble the dessert: wet the cake layers with some milk and add filling. Use the filling to coat the entire cake, too.
11. Now decorate the cake's edges with the croquant, and cream on top.
12. Refrigerate for 2 hours before serving.
