Strawberry roll cake: a fresh and irresistible dessert!

Here's a dessert perfect for any occasion!

INGREDIENTS

5 eggs, separated;

100 g (½ cup) sugar;

a pinch of salt;

2 tsp vanilla extract;

110g (⅞ cup) all-purpose flour;

30 ml (2 tbsp) vegetable oil;

250 g (1 cup) mascarpone;

250ml (1 cup) sweetened full-fat cream;

1/2 tsp vanilla extract;

Strawberry jam;

Powdered sugar;

Fresh strawberries.

METHOD

Beat egg yolks with sugar, oil and vanilla until pale.
In a separate bowl beat egg whites until stiff.
Whisk flour with salt.
Fold egg whites into the egg mixture until smooth. Sift in the flour and fold again until smooth batter forms.
Pour into a baking sheet. Bake at 180C/350F for 12-15 minutes. Leave to cool down.
Cover the sponge with strawberry jam.
Whip cream with mascarpone and vanilla and spread it on top of the jam layer. Cut into 5-6 strips and roll each as shown on the video.
Decorate the cake using some powdered sugar and strawberries.
