Strawberry roll cake: a fresh and irresistible dessert!

Here's a dessert perfect for any occasion!
INGREDIENTS
INGREDIENTS
5 eggs, separated;
100 g (½ cup) sugar;
a pinch of salt;
2 tsp vanilla extract;
110g (⅞ cup) all-purpose flour;
30 ml (2 tbsp) vegetable oil;
250 g (1 cup) mascarpone;
250ml (1 cup) sweetened full-fat cream;
1/2 tsp vanilla extract;
Strawberry jam;
Powdered sugar;
Fresh strawberries.
METHOD
- Beat egg yolks with sugar, oil and vanilla until pale.
- In a separate bowl beat egg whites until stiff.
- Whisk flour with salt.
- Fold egg whites into the egg mixture until smooth. Sift in the flour and fold again until smooth batter forms.
- Pour into a baking sheet. Bake at 180C/350F for 12-15 minutes. Leave to cool down.
- Cover the sponge with strawberry jam.
- Whip cream with mascarpone and vanilla and spread it on top of the jam layer. Cut into 5-6 strips and roll each as shown on the video.
- Decorate the cake using some powdered sugar and strawberries.
