Olive bread sticks: fragrant and crunchy!

INGREDIENTS
550g (4 1/2 cups) + 250g (2 cups) of all-purpose flour
7g of dry yeast
450ml (2 cups) of water
20g (1 1/4 tbsp) of salt
40ml (3 tbsp) of olive oil
350g of olives

450ml (2 cups) of water
20g (1 1/4 tbsp) of salt
40ml (3 tbsp) of olive oil
350g of olives
METHOD
- In a bowl with the flour add the yeast and water and mix until is well combined. Cover with the clean film and refrigerate for 10 hours.
- In another bowl add the rest of the flour and add the previously prepared mixture. Mix all well, add the salt and olive oil and combine well together.
- Add the olives and knead until the olives are soaked into the dough.
- Transfer the dough into the oiled bowl, cover with a cloth and let it rise for 2 hours or until is doubled.
- After time has elapsed transfer the dough to the working surface and make the 200g loaves. Let them rise for 30 minutes.
- After 30 minutes stretch each loaf, cover it with a cloth, and let it rise for 30 minutes.
- Remove the cloth and brush generously each loaf with olive oil.
- Bake in the oven at 240°C/464°F for 20 minutes.
