Choux pastry roll: soft and delicate to enjoy with every bite!

Light, easy to make and super yummy!
INGREDIENTS
For the dough:
3 eggs
400ml (1 1/3 cups) milk
200g (1 1/4 cups) flour
pinch of salt
20g (4 tsp) butter
For the cream:
250g (1 cup) mascarpone
10g (2 tsp) vanilla sugar
200g (1 1/2 cup) powdered sugar
500ml (2 cups) heavy whipping cream
For decoration:
bitter cocoa powder
METHOD
- Preheat the oven to 180°C/360°F.
- In a bowl whisk 3 eggs with a pinch of salt, add milk and whisk to combine. Whisk in flour and stir in melted butter.
- Pour the batter onto a baking sheet lined with parchment paper.
- Bake at 180°C/360°F for 20-25 minutes.
- Turn the baking sheet upside down and take the parchment off. Let cool completely.
- In a bowl combine mascarpone, whipping cream, vanilla sugar, and powdered sugar. Beat with a hand mixer for 1 minute and transfer to the fridge to chill for 20-30 minutes. Then continue to beat until thick.
- Spread the cream on top of the cake layer and roll tightly.
- Chill for 30 minutes.
- Decorate with bitter cocoa powder, slice and enjoy!
