Cherry cake: fluffy and soft, everyone will love it!

INGREDIENTS
550g (4 cups) pitted cherries
3 eggs
200g (1.6 cup) flour 00
100g + 50 g of sugar
50g (0.2 cup) butter in curls
15ml (3 tsp) milk
5g (1 tsp) Baking powder
15g (1 tbsp) Vanilla sugar
METHOD
- In a large bowl, pour the eggs and 100 g of sugar, whisk the mixture with a mixer. Add milk, vanilla sugar, then flour and baking powder and whisk everything into a fine, smooth mixture.
- Add the cherries to the mixture and combine them by mixing with a spatula.
- Preheat the oven to 180°C, line a 24 cm mold with baking paper.
- Pour the mixture into a previously prepared mold, flatten and sprinkle the surface with 50g of sugar and 50g of butter in curls. Bake at 180°C for about 40-45 minutes.
