Savory stuffed cake: how to make it fluffy and so delicious

Ingredients:
300g Manitoba flour (13g protein)
250g of all purpose flour
250ml of slightly warm fresh whole milk
2 large egg yolks
1 large egg
100g of melted butter
15g of fresh brewer's yeast
10g of sugar
10g of salt
for the filling:
250g of Provolone cheese or similar
200g of cooked ham, salami or other
Directions:
1. In a bowl, dissolve the brewer's yeast and sugar in the milk.
2. Add one egg and two yolks.
3. Then combine the two flours, the melted butter and the salt,
4. Work everything well and form a soft compound.
5. Let it rise for 2 hours and 30 minutes.
6. Then divide the dough into balls of 40 g each.
7. Stuff the balls and place them on a baking sheet.
8. Let rise for 90 minutes.
9. Brush with egg white and bake at 180° for 30 minutes.
