Homemade croissants: the recipe to make them soft and delicious

Ingredients:
12 g of fresh brewer's yeast
1 teaspoon of honey
100 g of warm water
145 of warm milk
80 g of sugar
250 g of Manitoba flour
95 g of cold butter
Essence
250 g of room temperature butter
1 egg
Milk
Powdered sugar
Directions:
1. In the bowl of your stand mixer mix water, yeast and honey mixing well with a spoon.
2. Then add in warm milk, sugar and flours.
3. When the dough is firm, add in the butter one piece at a time. Then add in the essence you prefer.
4. Blend for 15 minutes until the butter is completely absorbed.
5. Cover the dough with some plastic wrap and let rise until it doubles its size, or at least 2 hours.
6. Place a stick of room temperature butter between two baking paper sheets and spread it with a rolling pin making a very thin layer. Let the butter cool in the freezer.
7. Spread the croissants dough with a rolling pin on a flat surface covered in flour, the place the butter in the middle.
8. Fold the dough onto the butter, sealing the edges.
9. Let rest in the fridge for 20/30 minutes in a baking tray covered in plastic wrap.
10. Place the dough with the opening toward your right, and press it with the rolling pin. Then spread the dough lengthwise.
11. Fold the edges towards the middle, then fold it on itself. Let rest again in the fridge for 30 minutes. Repeat this process twice.
12. Spread the dough and cut some triangles out of it.
13. Roll them to make the typical croissant shape.
14. Place the croissants on a baking tray covered in baking paper, and let them rise overnight.
15. Brush the croissant's surface with a mix of milk and egg.
16. Bake at 200 degrees for 5 minutes, then at 180 degrees for another 15/20 minutes.
17. Decorate with some powdered sugar.
