Pumpkin tiramisu: a creamy and beautiful dessert

Ingredients:
12 g of isinglass
40 g of water
6 egg yolks
200 g of sugar
500 g of mascarpone cheese
400 g of cream
500 ml of coffee
Cinnamon
Savoiardi biscuits
300 g di cooked pumpkin puree
Unsweetened cocoa powder

Directions:
1. Make the gelatin by dipping the isinglass in cold water for 10 minutes.
2. In a saucepan boil water and sugar, until it makes a syrup.
3. Whisk the eggs and add the syrup, the the squeezed isinglass and continue mixing.
4. Add in the pumpkin puree.
5. Aside, whip the cream; the add mascarpone cheese and continue mixing.
6. Add in the egg and pumpkin mix, put in the cinnamon e mix everything.
7. While the cream cools down in fridge, make some coffee and pour it in a tray.
8. Dip the biscuits into the coffee, and make a biscuit layer in a cake pan. Above it, put the cream using a piping bag and dust with cocoa powder. Make more layers.
9. Let the tiramisu cool down in the freezer for 3 hours.
10. Decorate the surface of your tiramisu with some more cocoa powder.
