Cheesy cauliflower toast: the alternative to usual dinner!

Just a few ingredients to make a delicious toast!

INGREDIENTS
 2 medium heads cauliflower;
 2 eggs;
 150 g (5 oz) mozzarella, shredded;
 100 g (3.5 oz) almond flour;
 Sliced cheese to taste;
 Mayonnaise or butter.
 
METHOD
  1.  Shred cleaned and washed cauliflower using a blender or fine grater. Microwave cauliflower at HIGH for around 8 minutes.
  2.  Leave cauliflower to cool down until comfortable to handle, then transfer it onto a tea towel and squeeze as much moisture as possible.
  3.  Mix drained cauliflower with shredded cheese, eggs, almond flour and a generous pinch of salt and pepper.
  4.  Divide the mixture into quarters, then shape each one into a rectangle and place it on a greased baking sheet.
  5.  Bake at 200C/400F for 15 minutes, until golden. Leave to cool down for 10 minutes.
  6.  Sandwich sliced cheese between two cauliflower patties. Brush both sides with mayo or soft butter, then cook each sandwich over the medium-low heat until crispy and both sides.
