Cheesy cauliflower toast: the alternative to usual dinner!

Just a few ingredients to make a delicious toast!
INGREDIENTS
2 medium heads cauliflower;
2 eggs;
150 g (5 oz) mozzarella, shredded;
100 g (3.5 oz) almond flour;
Sliced cheese to taste;
Mayonnaise or butter.
METHOD
- Shred cleaned and washed cauliflower using a blender or fine grater. Microwave cauliflower at HIGH for around 8 minutes.
- Leave cauliflower to cool down until comfortable to handle, then transfer it onto a tea towel and squeeze as much moisture as possible.
- Mix drained cauliflower with shredded cheese, eggs, almond flour and a generous pinch of salt and pepper.
- Divide the mixture into quarters, then shape each one into a rectangle and place it on a greased baking sheet.
- Bake at 200C/400F for 15 minutes, until golden. Leave to cool down for 10 minutes.
- Sandwich sliced cheese between two cauliflower patties. Brush both sides with mayo or soft butter, then cook each sandwich over the medium-low heat until crispy and both sides.
