Christmas fruitcake (stollen) : perfect for celebrating with family or bringing to a holiday party!

This recipe will change how you think about the classic Christmas dessert forever.
INGREDIENTS

2 eggs;
150 g (5 oz) sugar;
200 g (7 oz) cottage cheese;
200 g (7 oz) butter, room temp;
450 g (15 oz) flour;
2 tsp baking powder;
zest 1 lemon;
zest 1 orange;
½ tsp vanilla powder;
a pinch of salt;
2/3 cup dried cranberries;
½ cup orange juice;
2/3 cup nuts and dried fruits mix.
METHOD
- Preheat oven to 180C/350F.
- Pour orange juice over dried cranberries and microwave until berries plump back up. Strain leftover liquid if needed.
- Combine sugar with citruses zest and sugar. Beat everything with a mixer until light and airy.
- Start adding eggs one by one until fully incorporated while still working with a mixer. Add cottage cheese.
- Separately whisk the flour with baking powder, salt and vanilla. Add flour mixture, cranberries, dried fruits and nuts into the butter. Use dough hooks and spatula to work the dough until smooth and uniform.
- Generously dust the working surface with flour, cut the dough in half and roll out each half. Fold 1/3 of the dough over the bottom 2/3 and place it on a baking sheet.
- Bake at 180C/350F for 40 minutes.
