Log cake: the best dessert ever to celebrate your Christmas party!

So easy and delicious
INGREDIENTS
100g (3/4 cup) flour
40g (1/3 cup) cocoa powder
1 tsp baking powder
1/2 tsp salt
4 large eggs, divided
150g (3/4 cup) granulated sugar
70g (5 tbsp) Greek yogurt
55g (1/4 cup) butter, melted
1 tsp vanilla extract
300ml (1 1/4 cup) heavy whipping cream, cold
86g (3/4 cup) powdered sugar
1 tsp vanilla extract
1/8 tsp salt
226g mascarpone cheese
220g semi sweet chocolate
240ml (1 cup) heavy whipping cream
Red currant for top
Rosemary for top
METHOD
- In a bowl mix the flour, cocoa, baking powder and salt.
- In a large bowl, combine the egg yolks and sugar and whisk together. Add the Greek yogurt, melted butter and vanilla extract and whisk together until well combined. Add the dry ingredients and mix everything together well, then set aside.
- Add the egg whites to a large mixer bowl and whip at high speed, add it to the batter.
- Spread the cake batter evenly into the prepared pan and bake for 10-12 minutes at 350’F (176’C)
- Add the heavy whipping cream, powdered sugar, vanilla extract and salt to a large mixer bowl and whip on high speed until soft peaks form, then add in mascarpone cheese. Spread the filling evenly onto the cake, then roll it up. Wrap it up in a plastic wrap and refrigerate for at least 2 hours to firm up.
- Mix the chocolate with hot whipping cream and when it cools enough whip it on high speed. Decorate the roll with a chocolate mixture. You can top it with rosemary and berries for choice.
