Khanom Pui Fai: the delicious steamed cupcakes

Ingredients:
cake flour: 300 g. / 2 1/2 cups
sugar: 250 g. / 1 and 1/4 cups
water: 1 cup
evaporated milk: 3 tbsps
(optional) emulsifying agent: 4 tsps
lemon juice: 1 tbsp
baking powder: 1 tsp
eggs: 3
jasmine extract: 1 tsp
food coloring: a few drops
Directions:
Sift the flour and the sugar, then put all the ingredients (except the food coloring) in a mixer. Then divide the batter and mix with food coloring, place into the molds and cook using a steaming pot. After 30 minutes your muffins will be perfect.
