Italian Carnival fritters (Chiacchiere) filled with custard: simple recipe

Ingredients:

Dough:
500g all-purpose flour
60g sugar
175g egg yolks
60g butter
4g salt
60 ml Marsala
Orange zest

Custard:
300ml milk
90g sugar
30g cornstarch
2 egg yolks
Orange zest
 
Directions:
In the mixer (but you can also do it by hand) add flour, sugar, egg yolks, butter, salt, marsala and orange zest. Knead and let the dough rest for about an hour.
Custard: heat the milk with the orange peel. Separately stir the egg yolks with sugar and starch. Pour the milk by filtering it and then put it back in the pot and let it thicken. Allow it to cool covered with plastic wrap.
