Eggplants sandwiches with mozzarella cheese: here’s a great way to surprise your guests!

Wash the eggplants, peel and slice them. Put them on a tray, salt each side of eggplant slices and allow to stand at room temperature for 15 minutes to draw out the moisture. Pat dry. In the meantime, take one slice of ham, fill with mozzarella cheese and sun-dried tomatoes. Dredge each slide of eggplant' slices in the flour, add the ham with mozzarella cheese and tomatoes, and overlap with an other eggplant's slice, like a sandwich. Dredge the sandwich in the flour, dip in egg and crust with panko. Place each slice on a sheet pan until ready to fry. Fry the sandwich and taste them.
