Mozzarella and Salad Sandwich

Ingredients:
75g Greek Yoghurt.
75g Mayonnaise.
4 Tbsp Taragon
4 Tbsp Chives.
Zest and Juice of One Lemon.
3 Tbsp Olive Oil
1 Avocado.
1/2 Cucumber.
2 Balls Buffalo Mozzarella Cheese.
Crunchy Lettuce.
Arugula or Rocket.
4 Slices of Seeded Brown Bread.
Salt and Pepper.
Instructions:
This makes tow sandwiches.
Add the yoghurt, mayonnaise, tarragon, chives, lemon zest, half of the lemon juice, two tablespoons of olive oil and a pinch of salt and pepper to a blender and blitz to form a sauce.
Slice the avocado, cucumber and mozzarella cheese.
Lightly mash the avocado.
Roughly chop or tear some lettuce leaves.
Add the lettuce and cucumber to a large bowl and add the remaining lemon juice, the remaining tablespoon of olive oil and a pinch of salt and pepper and mix.
Build your sandwich.
Begin with a layer of avocado, followed by lettuce and then cucumber, then add a layer of mozzarella cheese and then top with a handful of peppery arugula.
Spread the top piece of bread with a generous amount of sauce and then slice and serve.
