TORTILLAS with MEAT and PEPPERS: a perfect Mexican dinner to make in a few minutes!

INGREDIENTS
For tortillas:
130ml (1/2 cup) of water
40ml (1/4 cup) of peanut oil
Salt
260g (2 cups) of all-purpose flour
For the filling:
Extra virgin olive oil
Extra virgin olive oil
1 onion
260g of beef
Tomato sauce
1 bell pepper
80g of corn
210g of red beans
Salt
METHOD
1. In a bowl add the water and peanut oil and whisk. Add the salt and flour and mix with a spatula. When dough starts to form knead it with hands to obtain compact dough. Transfer to the fridge for 30 minutes.
2. Divide the dough into portions of about 70/80g and roll each one out with a rolling pin until it forms thin discs.
3. Heat the non-stick pan and cook the piadinas until they puff up.
4. Turn them over to cook the other side. When they are ready, place them on a plate and set aside.
5. In a pan add the olive oil and onion and fry until translucent. Add the meat and cook for about 5 minutes, stirring continuously. Then add the tomato sauce and cook for a few more minutes.
6. Finally add the corn and red beans and mix them all together. Remove from the heat and let it cool.
7. Stuff the tortilla with the filling, closing them to form a crescent. Serve them all together and enjoy.
