Fluffy lemon truffles: the delicious and fragrant recipe to try

Ingredients:
- For the lemon custard:
1-2 tsp of lemon zest
130 ml of lemon juice
190 g of sugar
10 g of cornstarch
3 eggs
- For the batter:
4 eggs
1 pinch of salt
120 g of sugar
120 g of flour
4 g of baking powder
30 ml of vegetable oil
40 ml of lemon juice
1 tsp of lemon zest
- For the filling:
300 g of cream cheese (or mascarpone cheese)
75 g of powdered sugar
150 of whipping cream
Directions:
1. Mix lemon juice and grated lemon zest in a saucepan. Then add sugar, cornstarch and eggs.
2. Cook on the stove at low heat stirring continuously until it thickens.
3. Cover with some plastic wrap and let cool.
4. Now make the batter: whip egg whites with pinch of salt and add sugar a little bit at a time. Then stir in egg yolks too.
5. Aside, mix flour and baking powder, sift them and stir them into the batter.
6. Mix oil, lemon juice and grated lemon zest. Pour this mixture into the batter, too.
7. Place the batter in a rectangular tray coated with baking paper.
8. Bake in a pre-heated oven at 160° for 25 minutes.
9. Let cool, then make some disks out of it with a cookie cutter.
10. For the filling just mix cheese, powdered sugar and whipping cream.
11. Now assemble the truffles filling the cakes with cream and lemon custard from before.
12. Coat the truffles with crumbled cake scraps.
