Puff pastry triangles with strawberries: an easy treat that everyone will love

INGREDIENTS
2 rolls of puff pastry
Egg yolk + milk
Sugar
520g (2 1/4 cups) of mascarpone
120g (1 cup) of powdered sugar
220g (3/4 cup) of fresh cream
Vanilla extract
Pistachio grains
Strawberries
Powdered sugar
METHOD
1. Unroll the puff pastry on the cutting board and cut it into triangles.
2. Brush the triangles with the egg yolk + milk and sprinkle with sugar. Cover them with another triangle and brush with egg yolk + milk.
3. Transfer triangles to the baking tray covered with parchment paper. Transfer to the oven and bake at 180°C/360°F for 20 minutes.
4. To prepare the filling add the mascarpone, powdered sugar, fresh cream, and vanilla extract to the bowl and mix with the electric mixer until is well combined and creamy.
5. Cut the puff triangles in half and spread the prepared filling with the pipping bag. Sprinkle with pistachio grains and arrange the strawberry slices. Spread the cream on top and close the pastry triangle.
6. Decorate them with the cream, strawberries, and powdered sugar and serve.
