Berries cheesecake: the colorful and creamy dessert

Ingredients:
Base:
180 gr of Digestive
2 tablespoons of coarse-grained sugar
1 pinch of salt
90 gr of butter
Mousse of mixed berries:
300 gr of berries
10 gr of isinglass (240 bloom)
30 gr of water
30 gr of lemon juice
300 ml of fresh cream
40 grams of granulated sugar
100 gr of berry jam
Decoration:
Berries to taste
 
Directions:
1. Base: blend the biscuits and mix them with sugar, salt and melted butter. Mash the mixture on the base of the mold and refrigerate for an hour.
2. Mousse: blend the berries with the sugar and then add the jam. Soak the gelatin, then dissolve it in water and lemon. Combine the mixture with the berries. Whip and add the cream to prepare the mousse.
3. Cover the base with the mousse and refrigerate for 4 hours.
4. Decorate with berries and serve.
