Lemon curd cookies: the mouthwatering and simple recipe

Ingredients:
75 grams of powdered sugar
1 egg
75 gr potato starch
180 gr of flour 00
120 gr of butter
zest of one lemon
5 gr of baking powder
Ingredients for the lemon curd:
100 gr of egg yolks
100 grams of sugar
100 gr of lemon juice
100 gr of butter
Directions:
1. Shortcrust pastry: in a bowl mix the flour with powdered sugar, salt and potato starch. Then add the lemon zest, egg, yeast and butter. Form a homogeneous dough and wrap it in cling film. Leave it in the fridge for an hour.
2. Cream: boil the lemon juice. Separately, mix the egg yolks with the sugar and add them to the lemon juice. Let it thicken on the heat and add the butter.
3. Roll out the pastry and form the biscuits by filling them with the cream.
4. Bake at 340°F (170°) for 15 minutes.
