Apple fritters: how to make them fluffy and delicious

Ingredients:
250gr of ricotta from the fridge
grated rind of one lemon
grated peel of an orange
1 glass of white sugar
2 eggs
1 glass of amaro 2cl
1 large teaspoon of baking powder
1 and a half glasses of soft wheat flour
2 apples
fry oil
 
Directions:
1. In a bowl, mix the ricotta with the sugar.
2. Then add the lemon and orange peel.
3. Also add bitters, yeast, eggs and flour.
4. Cut the apples and add them to the dough, mix well.
5. Form the pancakes and fry in hot oil.
