Ovis Mollis biscuits: the yolk pastry easy to prepare!

INGREDIENTS
200g (1 ¼ cup) 00 flour;
120g (½ cup) butter, cold;
2 egg yolks;
60g (½ cup) powdered sugar;
a pinch of salt.

METHOD
- Boil egg yolks until they are hard-boiled (around 5-6 minutes). Let cool down.
- Whisk flour with salt and add cold butter in. Crumbled cooled egg yolks into the butter and combine everything with your fingers. When crumbs form, press them together into a ball, wrap in plastic and chill the dough in the fridge for 30 minutes.
- Roll the dough out and cut out your cookies.
- Bake for 15 minutes at 160°C/320°F.
