Apricot cake: super moist and delicious!

This dessert is perfect for any occasion!
INGREDIENTS
INGREDIENTS
1 egg
125g (1 cup) of flour 00
40g (2 tbsp) sugar
50g (1/4 cup) of butter
2g (1/2 tsp) baking powder
100g apricots
For the cream:
1 egg
50g (1/4 cup) of sugar
10g (1 tbsp + 1 tsp) cornstarch
Vanilla extract
170g (1/2 cup + 1 tbsp) white yogurt
Powdered sugar
METHOD
- In a bowl sift the flour and add the sugar, baking powder, butter, and mix with the hands.
- Add the egg and mix with the hands to create the batter. Add the batter to the mold and spread it with your hands. Leave in the fridge for 15 minutes.
- In another bowl add the sugar, cornstarch, and mix. Add the yogurt, egg, vanilla extract and mix all together well.
- Cut the apricots into small pieces and add them on top of the prepared batter.
- Add the cream on top and spread evenly on all sides.
Bake the cake at 356°F/180°C for 40 minutes and decorate with powdered sugar.
