Apricot cake: a genuine and simple recipe!

INGREDIENTS
1 egg
60g (1/4 cup) sugar
1 lemon
60ml (1/4 cup) sunflower oil
60ml (1/4 cup) sunflower oil
100ml (1/2 cup) milk
180g (1 1/2 cup) flour
8g (1 3/4 tsp) baking powder
6 apricots
Powdered sugar
METHOD
- In a bowl add the egg, sugar, and whisk. Add the lemon zest and juice from one lemon and whisk again. Add the oil, milk and whisk again.
- Add the flour and sifted baking powder and combine them all together well. Cut the apricots in halves.
In a pan with a baking sheet add the mixture and the apricots on top. - Bake at 356°F/180°C for 25 minutes and decorate with powdered sugar.
