Strawberry and ricotta flowers : a fun recipe to make a surprising dessert!

A simple dessert that the whole family will love!
INGREDIENTS
For the dough:
350 g (2 1/2 cups) flour
40 g (3 1/4 tbsp) sugar
a pinch of salt
a pinch of vanillin
7g (1 tsp) dry yeast
1 egg
100 ml (1/3 cup + 2 tbsp) warm milk
50 ml (3 tbsp + 1 tsp) sunflower oil
50 ml (3 tbsp + 1 tsp) heavy cream
For the dough:

For filling:
150 g (1/2 cup) ricotta
50 g (1/2 cup) sugar
1 egg yolk
7 g (1 tbsp) cornstarch
pinch of vanillin
pinch of salt
For brushing:
1 egg yolk
15 ml (1 tbsp) milk
For decoration:
4 strawberries, cut in half
Powdered sugar

METHOD
- Pour warm milk into a mixing bowl, add dry yeast and stir.
Add sugar, a pinch of salt, vanilla and stir to dissolve.
Add egg, sunflower oil and cream and whisk until combined. - Add flour to the bowl and stir slightly with a spatula. Then continue to knead the dough with your hands till you receive an elastic dough.
- Cover the bowl with a kitchen cloth or plastic wrap, and allow to rise twice in a warm place.
- In a bowl mix ricotta with egg yolk, sugar and cornstarch until smooth. Transfer into a piping bag and set aside.
- Transfer the dough onto a working surface and divide it into 8 parts.
- Shape each piece into a ball. Cover balls with a kitchen cloth or plastic wrap and leave for 15 minutes.
- Take a ball, flatten it a bit and roll into a circle. Cut the circle into 4 parts and fold each part in half. Then bend the ends to the opposite side overlapping each other. Seal the sides and arrange all 4 pieces in the small baking form making a flower. Continue with the remaining balls.
- Pipe ricotta mixture into the center of each “flower”. Cover with a plastic wrap or kitchen towel and let sit for 20 minutes.
- In a small bowl beat egg yolk with milk and brush each petal with the obtained mixture.
- Preheat the oven to 200C/400F and bake “flowers” for 20 minutes.
- Insert a strawberry half into the middle of each flower, sprinkle with some powdered sugar and enjoy!
