Strawberry marshmallows: the homemade recipe for the joy of your kids!

For dusting:
50g (1/2 cup) powdered sugar
60g (1/2 cup) cornstarch
To dissolve gelatine (or according to the package instructions):
15g (2 tbsp) unflavored gelatin powder
120ml (8 tbsp) water
For strawberry puree:
300g frozen strawberries
60ml (1/4 cup) water
40g (3 tbsp) sugar
For syrup:
90ml (6 tbsp) water
530g (2 2/3 cups) sugar
200g (1/2 cup) corn syrup
30g/2 tbsp strawberry puree (reserved)
METHOD
- Prepare the dusting: sift powdered sugar and cornstarch into a medium bowl.
- Line a foil baking tray with parchment paper, and dust thoroughly with the mix of powdered sugar and cornstarch. Set aside.
- In a small bowl, stir together gelatin and 8 tablespoons of water. Set aside.
- Add frozen strawberries to the medium pot set over medium heat, add water and sugar and cook for 5-6 minutes to release juices. Blend with an immersion blender and strain through a sieve.
- Reserve 30g of strawberry puree for later use. Add gelatin mixture to the remaining puree and stir to combine.
- In a pot combine water, reserved strawberry puree, sugar and corn syrup. Cook on medium heat, stirring occasionally until it reaches 112C/233F.
- Place gelatin-strawberry mixture into a large bowl and beat with a mixer on medium speed with the whisk attachment.
- When the syrup has reached 112C/233F, carefully and slowly pour it into the strawberry and gelatin mixture and beat 10-12 minutes, or until the mixture obtains a light shiny pink color.
- Pour the marshmallow mixture into the prepared aluminum form and spread evenly.
- Allow setting overnight in a cool place.
- Unmold marshmallows and dust generously with the mix of powdered sugar and starch.
- Cut the marshmallow into squares, coating the knife blade with the prepared dusting as needed.
- Toss each marshmallow in a sugar/starch dusting and enjoy.
