Homemade breakfast cookies: delicious and easy to make!

INGREDIENTS
100g (1/2 cup) of butter
70g (3/4 cup) of powdered sugar
1 egg
Vanilla essence
250g (2 cups) of all-purpose flour
5g (1 tsp) of baking powder
25g (1/4 cup) of potato starch
30ml (2 tbsp) of fresh cream
METHOD
1. In a bowl add the butter and powdered sugar and mix with the electric mixer. Add the egg along with the vanilla essence and mix quickly.
2. Sift the flour, baking powder, potato starch, and cream. Mix with a spatula until combined and then knead with your hands until they form a smooth dough. Wrap it in cling film and let it rest in the refrigerator for at least 30 minutes.
3. After time has elapsed roll out the shortcrust pastry with a rolling pin bringing it to a thickness of 7-8 mm
4. With a 5 cm circular pastry cutter cut out many discs. With a digger, or a 1 cm circular pastry cutter form the central hole on each shape.
5. Transfer the biscuits to a baking tray covered with parchment paper and bake in the oven at 180°C/360°F for about 15 minutes or until lightly browned.
