Bread gnocchi with tomato sauce: a super idea to recycle stale bread!

INGREDIENTS
For gnocchi:
200g of stale bread (hard)
150ml (1/2 cup) of milk
1 egg
1 tbsp of parmesan
Salt
80g (3/4 cup) of flour
For the tomato sauce:
Extra virgin olive oil
1 clove of garlic
400g (1 3/4 cups) of tomato sauce
Basil
METHOD
1. Crumble the bread with your hands into small pieces in a bowl. Add the milk, egg, parmesan, and salt and start kneading with your hands to combine. Gradually add the flour and continue kneading to obtain the dough.
2. Transfer the dough to the working surface and split it into three pieces. Roll out each piece with your hands and cut it into pieces. Roll out each piece to obtain the ball.
3. Add the bread gnocchi into the pot with boiling water and let them boil for a few minutes until they come to the surface. Remove them from the water and let them cool.
4. In a pan add the olive oil, garlic, tomato sauce, and basil and cook until the sauce is thickness. Add the gnocchi and stir all well.
5. Serve bread gnocchi on a plate and sprinkle with parmesan.
