No-bake coconut rolls: a sweet treat ready in no-time!

They are perfect for any occasion!

INGREDIENTS
1 liter (4 cups) milk;
125g (1/2 cup) butter;
120g (1 cup) flour;
30g (1/4 cup) cornstarch;
200g (1 cup) sugar;
1 packet (1 tsp) vanilla sugar;
200g (2 cups) shredded coconut;
125g (1 cup) chopped nuts;
Melted chocolate for decoration.
 
METHOD
  1.  Cook melted butter and flour over medium-low heat for 2-3 minutes. Pour milk in portions, while whisking constantly.
  2.  Add vanilla sugar and cook over medium heat for 5-7 minutes or until very thick. Blend if lumps form.
  3.  Cover 30x40 cm baking sheet with parchment and sprinkle coconut on top. Carefully pour thick cream over and smooth everything with a spatula.
  4.  Top with an even layer of chopped nuts and let sit in the fridge for 3 hours.
  5.  Cut the sheet of cream in half and roll each half carefully. Decorate with melted chocolate, slice and serve right away.
