Banana bread: the recipe to make it very special

Mash the bananas and add the flour, eggs, sugar, and butter. So soft and fluffy, the recipe:

700g (24.5 oz) flour;
1 tsp salt;
15 g (0.5 oz) dry yeast;
1 tbsp sugar;
2/3 cup warm milk;
2 bananas;
2 eggs;
2 egg yolks;
50g (1.7 oz) sugar;
80g (2.8 oz) butter, room temperature.
METHOD
- Whisk warm milk with sugar and yeast. Set aside until the mixture becomes airy and bubbly.
- Meanwhile, whisk the flour with salt. Mash bananas with a fork to make a puree.
- Add yeast mixture, banana puree, eggs, yolks and sugar into the flour.
- Use dough hooks to stir everything together and make a smooth and elastic dough. Add room temperature butter and incorporate it into the dough.
- Form the dough into a ball, cover and set aside for an hour.
- After an hour roll out the dough into a rectangle, roll 2/3 way and cut unrolled part into strips. Place strips on top of the loaf, transfer into a buttered baking pan and brush with egg wash. Set aside for 30 minutes.
- Bake at 180C/350F for 45-55 minutes.
