Banana pudding fluffy cake: the result will leave you speechless!

Fluffy and creamy, this cake is divine!
INGREDIENTS
For the base:
2 egg yolks;
4 egg whites;
90 g (3 oz) sugar;
120 g (4 oz) banana, pureed;
100 ml (3.5 fl. oz) milk;
120 g (4 oz) flour;
1 tsp baking powder;
1 tsp vanilla extract;
¼ tsp salt.
For the custard:
330 ml (11.5 fl. oz) milk;
2 eggs;
90 g (3 oz) sugar;
2 ½ tbsp cornstarch;
1 tsp vanilla extract.
METHOD
- Start with custard. Whisk all of the ingredients listed in a small pot with a thick bottom. Make sure there are no lumps. Place a pot over the medium-low heat and cook the custard for 4-5 minutes or until thick. Whisk the custard nonstop while cooking.
- Pour the custard into a bowl and cover with plastic. Set aside to cool completely and whisk fine before using it.
- For the base beat egg whites with salt, adding sugar in portions, until stiff peaks form.
- Whisk eggs, milk and banana puree together. Separately combine flour and baking powder.
- Fold egg and banana mixture and dry ingredients into the airy egg whites. Pour into a squire 20x20 cm baking pan and bake for around 45 minutes at 160C/320F. Check with a toothpick.
- When the base has cooled down, spread the custard all over and slice into squares before serving.
