The result will leave you speechless!

INGREDIENTS
60ml warm water
20g Honey
10g Gelatin
140g Crushed cookie
70g Melted unsalted butter
1 Egg yolk
25g Water
35g Sugar
20g Honey
150g Mascarpone cheese
5g Lemon juice
300g (1 1/4 cup) Whipped cream (whipped up 60%)
5-7 pieces of peaches in syrup
Yellow coloring
 
METHOD
  1. Mix crushed cookies with melted butter, transfer it to a baking pan, leave in the fridge.
  2. In another bowl onto a hot water mix water, egg yolk, sugar and honey, add in cream cheese and whipped cream then add in gelatin.
  3. Pour a little of the mixture onto the cookie dough, add peaches, pour the mixture to coat the peaches, refrigerate it for 30 minutes and add coloring to the rest of the mixture and pour it on top.
  4. Freeze for 2-3 hours and top with honey.
