Pumpkin whoopie pies: the recipe to make these amazing stuffed cookies

Ingredients:
Pies:
- 2 cups brown sugar
- 1 cup vegetable oil
- 1 1/2 cups pumpkin
- 3 cups flour
- 2 eggs (at room temperature)
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
Filling:
- 4 ounces cream cheese, room temperature
- 3/4 cup (1 1/2 sticks) butter, room temperature
- 1 teaspoon vanilla
- 1 teaspoons maple extract (optional)
- 2 cups sifted powdered sugar
Directions:
Pies:
Mix brown sugar with oil, then add pumpkin and mix well.
Add eggs, flour and all the dry ingredients. Mix very well and make the pie. Bake at 350°F (175°) for 10 to 12 minutes.
Filling: whip cheese and butter, then add vanilla, maple extract and sugar. Fill the whoopies and enjoy!
