How to prepare slow cooked beef cheeks with red wine sauce

Ingredients:
3 tbsp olive oil , separated
1.5 kg/3lb beef cheeks
1 onion
1 celery stalk
1 carrot
4 garlic cloves
6 stems of fresh thyme or 1 1/2 tsp dried thyme leaves
4 dried bay leaves
1 cup / 250 ml beef stock
2 cups / 500 ml red wine
2 - 3 tsp salt , separated
Black pepper

2 cups / 500 ml red wine

Black pepper
Directions:
Season the beef and brown in a pot, then set aside. In the same pot cook together all the ingredients for the sauce and add the beef, simmer for 2.5 hours. Then blend the sauce and serve with mashed potato too.
