Mediterranean stuffed zucchini: a quick meal very yummy

Ingredients:
4 zucchini squash
1 cup diced roasted red bell pepper
2 cups garlic croutons
1/4 cup sliced black olives
1/2 cup crumbled feta cheese
1 lemon, juiced
2 tablespoons extra virgin olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
Directions:
Slice the ends off your zucchini and then slice them. Place the zucchinis in the pot and boil for 5 minutes. Then dry and cut the zucchini as the video shows, empty and fill with the stuffing.
Place the stuffed zucchinis under a broiler for 3-5 minutes.
