Mini lemon tart: an explosion of taste for each taste

For the tart :
60g Unsalted butter
40g Powdered sugar
1 egg yolk
Vanilla oil
130g Cake flour
(or All purpose flour)
For the filling:
1 egg yolk
40g granulated sugar
12g Cornstarch
100g Warmed Milk
10g Lemon juice
For Toppings:
150g Heavy Cream
12g granulated sugar
Lemon essence
20g White chocolate
Lemon slice
Mint leaves
Directions:
Mix butter and sugar, then add yolk, vanilla oil and cake flour. Make the dough and refrigerate for 30 minutes. Then cut and make a circles, bake at 356°F (180°) for 12 minutes.
Filling: mix all the ingredients into a bowl and microwave for 1 minutes, then mix again and microwave for other minute. Mix and refrigerate.
Topping: melt the chocolate and mix with cream and lemon essence.
Fill the tart with this cream and whipped cream.
Serve and enjoy!
